Benefits of Using a Pizza Stone

  • Even cooking eliminates hot spots.
  • No food lost through open racks.
  • Cut directly on the pizza stone surface.
  • Retains heat even after removal from oven.
  • Seasons like a cast iron skillet.
  • Fast and easy clean up.
  • Oven and broiler safe.
  • Dishwasher safe.

Pizza Stone Preparation

  • Before using, rinse with warm water, and towel dry.
  • If the recipe calls for a greased pan, lightly coat with cooking spray.
  • In some areas of the country where a lot of moisture exists, place the stone in the oven and heat to 450-500° for one hour. LET COOL. This, as well as repeated baking, improves baking properties.

Maintaining Your Pizza Stone

  • Bakeware should NEVER be placed/soaked in water.
  • Do not wash bakeware and place it directly in a hot oven.
  • Stains can be removed, if desired, with a brass BBQ brush or scraper after the pizza stone has cooled.
  • Bakeware can also be placed in the oven, set at self cleaning.

Pizza Stone Usage

  • Always use a heat resistant potholder when handling bakeware.
  • Bakeware is NOT to be used over an open flame or in direct contact with the stove top.
  • You can cut directly on bakeware, as knives and metal edges will not harm the surface.
  • Do not expose your bakeware to quick temperature changes. Taking it from the oven to the freezer or refrigerator, and vice versa, can cause breakage.

Pizza Baking Instructions

  • Put pizza stone on bottom rack of oven. Set the oven to the highest baking temperature available. Preheat for 20 minutes or longer. A hotter stone results in a crispy crust.
  • Roll out dough. DO NOT EXCEED DIMENSIONS OF STONE. Dough overlaying stone will burn.
  • If using a pizza peel (paddle), generously sprinkle the peel with cornmeal. Cornmeal allows pizza to slide off of the peel (paddle) onto the stone. You can also use a non-stick cooking spray, if you wish.
  • Place dough on peel (paddle), and add toppings. Carefully place the dough onto the hot stone.
  • Bake based on dough instructions.
  • When done, remove pizza from oven with peel (paddle), and place on a metal rack to cool.
